I tried to get Big Sur on my Retina, 15", Mid-2015 MBP but it can't be found in the System Update.

Subject says it all. I went to support.apple.com/en-us/HT211683 and clicked the macOS Big Sur link. It popped up the App Store with Big Sur's page. I clicked GET. It popped up the Software Update in System Preferences which says "Update not found The requested version of macOS is not available."

Any ideas? My model is on the hardware compatibility list. It is offering me Monterey, but I don't want to go that far from Mojave at the moment. (I am on the latest Mojave security patch -- 10.14.6.)

I would suggest you upgrade first to 10.15 Catalina, then apply any Catalina updates that are available through Software Update.

Once that has been completed, make the transit to Big Sur.

❗️ Do NOT upgrade until you have made a Time Machine or other backup of your startup drive.
