What do you mean "restore the old copy of my i phone to my computer" exactly?

If you mean can you store a backup on your Mac, yes. If you mean can you access the data within that backup directly on your Mac, then no. iOS device backups can only be applied to iOS devices. Macs cannot be restored using iOS device backups in any way, they just store them in a directory but cannot access their data directly.
