so we all know that ipad os 15 changed home screen grid and let’s be honest, it’s so bad. i really want to downgrade back to ios 14.6 on my ipad 5th gen cause it was more comfortable to use and amazing, can someone help me? may downgrading without loosing data?
Your app screen (without Widgets) should still be arranged in the 5 x 6 grid, like iPadOS 14. Adding Widgets will space the apps out more. Beyond that, there's no way to 'fix' it, I'm afraid.

Downgrading is not possible with iOS/iPadOS devices.
