How do I avoid a forced update when restoring?

I have an iPad Air 4 on ios 14.4.1. I had to erase all my apps and data becuase a few of my apps were bugged and wouldnt delete from the home screen.

I then used I tunes to restore a back up for my ipad but once it was finished iI was meet with the "swipe up to upgrade" screen an the problem is I doont want to opdate at all.

I tried recovery mode and hooking up myu ipad to itunes but the only options I seee are "update" and "restore and update" Is there any way I can reactivate my ipad without updating to the newest ios?

When restoring your iPad, you will have no alternative other than to update your iPad to to most recent version of iOS/iPadOS supported by your iPad.
