I had same issue, When I did, force restart the watch (hold down the side button and the Digital Crown at the same time for at least ten seconds, until the Apple logo appears) It solved.

This bug is reportedly fixed in watchOS 9.0.2:

• Snooze alarm notifications continue after the alarm is deleted for AssistiveTouch users

I did the following in the Watch app:

• Disabled “Accessibility —> Assistive Touch”
• Disabled “Accessibility —> Assistive Touch —> Hand Gestures”

That message still appears.

I also tried disabling “Snooze” in my sleep schedule, and even disabling the alarm in my sleep schedule.

Then I restart the watch (normally, no need to force restart). That seems to work. But only temporarily. If I re-enable Assistive Touch and Hand Gestures, the problem returns the following morning (presumably after the alarm happens).

This feels like a bug that will be resolved in a future update to watchOS. 🤞

And a reboot after that seems to resolve it.
