How do I remove the iPad from the device list?
Presumably you refer to the device list that can been seen in your iPad settings?
Settings > [Your Name / AppleID]
Disabling Find My for the device - and fully signing-out from iCloud on the device will automatically delete the device from your device listing.
Settings > [Your Name / AppleID] > Find My > Find My iPad > Find My iPad - set to OFF
Settings > [Your Name / AppleID] > Sign Out
