How to boot my Mac mini late 2014 from my Kingston XS2000 1TB SSD

Hello. After updating my Mac mini late 2014 to OS Monterey, it became slower than a slug. It takes at least 20 minutes just to open a PDF file! So upon recommendation, I purchased a Kingston XS2000 1TB SSD. My question: Please, step by step, how do I set up my SSD as my HD?
