I recently found out about 'non-breaking spaces' which ensure that two words (for example, Mr. John) don't break into two lines when pushed towards the edge of a line.
Similarly, is there a way to keep certain words or characters together after punctuation marks (for example, km/h and high-tech)?

You are typing in Pages and decide you do not want a word split at a specific point. You press control+cmd+spacebar to open the Emojis & Symbols panel.
Search for the phrase word joiner as I had shown previously. You select where I clicked beneath the term Unicode Name to expose the word joiner character. When you double-click that selection, the word joiner character is inserted at your current Pages insertion point. Because it is a zero-space character, you shouldn't be aware of its insertion, but it will be there.
I recommend that you add the Word Joiner character to the Favorites selections of the Emojis & Symbols panel so you don't need to search for it again.

When the Emojis and Symbols panel is open, you can actually search for the word string word joiner, and as the following screen shot shows, you can double-click the selection to insert it into a character string in Pages.
