I accidentally deleted important information in my notes. How do I recover them. I don’t see them in my icloud

Have you checked you 'recently deleted' folder to see if they're there...? Deleted notes aren't immediately deleted, they're moved to that folder for 30 days before being permanently deleted.
If they're NOT in that folder, they're gone. Apple WILL NOT be able to help you recover them as it has no access to your iCloud (as that would illegal)
The only other possible way you could recover them is if you had a back up of your phone prior to deletion. Otherwise, they're gone, I'm afraid...
If no backups were made your deleted notes are gone.
