Do you have a beta version of iOS 15.7 installed?

You also have several other issues, to update, you need to:
1. Have both WiFi and cellular connections.
2. Have your battery charged to at least 50%. Better yet, charge to at least 50% and leave it plugged I to power during the update.
3. You must turn off Low Power Mode.
