You should be able to add a new credit card using the steps listed in this link:

In addition to what Carol B. said, you could also add your new card to ApplePay and use that as your default payment method.

If your stolen card was already in ApplePay, you should remove it by:

Opening your Wallet app

Tap your stolen card

Tap the "..." information icon at the top-right

Tap "Card Details"

Scroll to the bottom and tap "Remove Card"

After doing this, you can add your new card by scrolling to the top of the main page of the wallet (deselect all cards) and tap the "+" icon.

Tap "Debit or Credit Card"

Then choose whether to place the new card within the frame of the camera or enter the info, manually.

NOTE if you are given the option to choose to add a previous card to ApplePay (you may do this be reaction, as the card will look identical to your new one...outside of the last 4 numbers being incorrect lol), refuse this option as you will just be re-adding the card you had stolen.
