Error when trying to reinstall MacOS Sierra - MacBook Pro (Early 2015)

Hi all. So I have a MacBook Pro (Early 2015) that I was trying to restore to factory settings. I went ahead and erased Macintosh HD using Recovery Mode and did not know if I was supposed to do anything else so hit restart. Since then I have been able to enter recovery but it has been prompting me to go into Internet Recovery - which is fine and I can only download macOS Sierra, but close to the end of the install process I keep getting hit with "An error occurred while preparing the installation. Try running this application again", I have tried to run it back multiple times to no avail. I have also tried to prep a bootable usb with Sierra OS on it but am not seeing an option to load from the bootable device - tried pressing option button upon restart but it keeps prompting me to go into internet recovery. I only have a windows device to work with and I used this to create the bootable usb. I also do not have any apple stores near me so that is not an option, any ideas or anything I can do from home to get this resolved. Note, before erasing the SSD I had macOS Monterey installed on it. Please help.
