Is the text blue or green, if the latter you're in a MMS group chat and not a group imessage. Add and remove people in group text messages on your iPhone or iPad - Apple Support

To expand a little on razmee209's question. The question isn't whether or not people have Apple Devices. It's whether or not they're using iMessage. One send messages from an iPhone without being signed into iMessage. In that case, the messages would be SMS (green) messages.
I am having difficulty adding someone to a group chat and they have an iPhone and there are more than 3 people in the group that are using apple devices and none of the suggestions work, the add contact is not showing up
