how do i set multiple monitors on my mac book pro m2 pro , eg monitor 1 and monitor 2 with the laptop open or laptop in clamshell mode
In clamshell mode both monitors are mirrored
MacBook Pro (M2 Pro, 2023)
when you select
[√] Mirror Displays,
both displays are serviced by the same display-generator, perfectly in Sync:
when you uncheck that box, or drag the overlapping icons away from each other each, each display uses a separate display-generator, and each can have a different resolution and a different picture:
You arrange the blue display Icons to correspond to their placement on your bench, and then the mouse moves freely across the virtual boundary between displays, and can carry a window with it.
If you drop the window so that part is on each display, the different portions will be referred and scroll "the right way".

Its a 14 inch macbook pro m2 pro chip and I am using a thunderbolt dock with type C connector
When its opened, it shows one is apple screen as one and the other two as external as one monitor ?
In clamshell mode the other two monitor are external as well .
I just want to be able to use both external monitors and (nice to have) use the laptop monitor as third one

14-in MacBook Pro with Apple-silicon M1 or M2 processor supports two external displays.
Macs CAN support two independent displays on a genuine ThunderBolt cable connected to a genuine ThunderBolt device (Dock or Display).
¿What make & Model dock are you using?

Leave personal information off of these forums. These forums are out there for virtually anyone to view. So, I have asked the Host to remove your first reply's second image, as it has this info: i.e. The MAC Address. Once someone sees this information, they'll know to whom this device pertains, and have your information.
if you can get satisfaction by unchecking [√] Mirror Displays, then the DellDock is the likely culprit. It is nothing but trouble on a Mac when trying to support multiple displays.
You could try connecting your 1920 by 1080 using a certified "Premium High Speed HDMI cable".

what screen size? 13-in, 14-in, 16-in?

what make & model displays, and how are you connecting to the docking station?
that dock has an upper limit on the sizes of display it can support. what displays at what sizes are you trying to use?
