So I completed my monthly challenge today, and my watch congratulated Aaron on the achievement…. My name is Lawrence. I’ve had this Apple Watch since new, it’s never been registered to anyone else.
is this a bug or is someone named Aaron completing my fitness goals whilst I sleep ?

You were spot on, in Settings > Contacts > My info
it was set to the first person in my contacts list.

Check your iphone contacts, the "My card" at the top, and check the name is Lawrence on there
It happened to me when I added a new admin account to my Mac called Spare Admin and signed it into my iCloud.
That somehow updated the My Card contact to Spare Admin and I got "Congratulations Spare"!
