If you accidentally add money to Apple Pay that you don't intend to use that way (as from your Apple Credit Card), can you pay it back to the card or somewhere else. If so how?

I presume that you mean Apple Cash? You can spend the money. Pay your Apple Card. Send it to someone through iMessage. Or, transfer the funds back to your bank.
