So, I’ve tried multiple times to restore my iPod Classic 5th Gen on both Windows and Mac, but it keeps telling me that I need to restore it using iTunes. What do I do to get it to work?

If the Restore procedure is not completing, even after multiple tries, that suggests that there is a hardware problem with your iPod. Have had much of the same problem, but a little trawling of the IP calls comes back with a 404 error. In short Apple has turned off the servers and updates are no longer possible.
iTunes also has had the drivers stripped out.
iPod support is now dead. A sad day.
Using iTunes is the way to restore the iPod. There is a Restore option in iTunes. You cannot restore it by using Windows or Mac on its own, you need iTunes (or Finder on later Macs).
