I haven’t backed up an older iPad in over two years… (I’ve been using a new one, although they’re linked). My new one crashed, can I still back up the old one with all the new information?

You can restore a backup for one iPad to another - however, the target iPad must have the same or more recent version of iOS/iPadOS as was used to create the backup.

As such, unless you have updated your older iPad to the same or more recent version as your current iPad, you’ll not be able to restore the backup for your newer iPad to the old iPad.
