I use several different iPads. (iPad pro 12.9 5th generation, iPad 10.2 9th generation - because I can use wired earbuds, and iPad mini latest generation) Right now they all have the same apps. Can I delete an app on one iPad that I don’t use/need without the same app being deleted on all the other iPads??

Yes you can. Deleting an app on one device will not delete the app on the other iPads.
