Once I've transferred my info from my old ipad to my new ipad, can I delete some stuff on my old Ipad and keep on new ipad?

“Transfer” is rather a misnomer. In reality, your data and setup is merely cloned to the new device. Nothing is moved or removed from the original device. However, if the original iPad remains signed-in to your AppleID - and is synchronised with iCloud - manual file deletion will be synchronised with the new iPad. As such, before making manual deletions from your old iPad, carefully consider which Apps and iCloud services are enabled on your iPads.

If the donor iPad, from which you are transferring your data precedes iOS12.4, QuickStart will not be available.
