Does the apple watch provide sleep metrics including rem sleep and restorative sleep and perhaps O2 levels?

Yes, Apple Watch is capable of tracking Sleep Cycles (Awake, REM, Core, Deep), total time asleep, respiratory rate, and heart rate.
