Apps as arranged on your Home Screens cannot be automatically sorted. You can manually arrange the App and App Folder icons to meet your preferences, but the layout cannot be automated.

Move apps and widgets on the Home Screen on iPad - Apple Support


However, for iPadOS14 and later, iPad has an App Library - that automatically sorts Apps (within the Library) into multiple automatically curated App-groups - based upon App category information from the App Store - and alphabetically.


While the App Library cannot be directly edited, you can create App Groups of your own choice on any Home Page - this being fully described in the iPad User Guide:

There is no way to keep your apps sorted in the iPad or iPhone for that matter. The screens are there for you to move the apps to anywhere you want and even add folders to group apps. You can Reset your Home Screen which will eliminate all folders and move the standard Apple apps to their default position, then all of your downloaded apps will be arranged alphabetically after the default apps. You can see how to do this at the bottom of this support article. That is probably the closest you will get to achieve what you want.
