My Apple Watch has been missing for a couple weeks now and before it was lost it was showing up on find my and I still am able to access the settings of my watch on the watch app. However it stopped showing up on find my by itself and now I am out $300 on an Apple Watch bc it decided to stop working.

It probably stopped showing up because the watch battery died. At the very least, you should put it in Lost Mode:
