Can iPhone 15 connect to Mac ventura? I do not want to update

That message to update is simply a small update to Finder or iTunes to allow it to communicate with your iDevices. Restarting the Mac may allow the message to reappear so you can complete that needed update (Not an OS update).

Oh **** **** **** - sometimes I am so brain dead!! I hate to admit but Ventura is on the new machine and yeah, no problems, works fine. MOJAVE is the problem child on my old Mac. Golly I feel so stupid... read all the above but sub Ventura for Mojave (10.14.6) - I got ventura on the brain because this old Mac really wants it and is not gonna get it.

Try the following: create and log into a new, basic, admin user account, Set up users, guests, and groups on Mac, and see if the iPhone problem persists.
Note: do not launch any 3rd party apps in the account so as to not install any of the supporting files that most create.
If the problem isn't present then go back to your original account and try the iPhone again.
When I first connected the new 15 to the Mac running ventura, I got a popup saying I’d have to update the Mac. Said it would not run on ventura. But you know sometimes no but other times yes. Since then when I’ve tried, the mac does not show that response but neither does it see the 15. I’ve set Finder to show everything but no joy. iTunes does not see it either. I’ve also tried running directly through the usb on the back of the Mac as well as through a usb stack. No joy.

What actually happens when you connect the iPhone to your computer? Is there an error message? What is happening or not happening?
Nothing happens. Finder doesn’t see it, iTunes does not see it and iMazing does not see it. I got that popup the first time saying I’d have to update the Mac and now nothing. I’ve done the try different cables and try direct to computer but no joy. Any help greatly appreciated
Thanks - I did that and the message never reappeared. Tried a restart on both. Tried several different cables because, you know... ejected a working extra drive and used that slot... no go, but for it not to even see it? I just dunno... any other ideas? It's not a game stopper as I have the new machine but I do like this old one for iTunes and other things. I know a lot of folks never took to iTunes but I really love it. I have reasons for staying on Mojave and do not want to update this old Mac.

Actually that notification about an upgrade needed to use the iPhone is a UI update, not a system update.
Today I just got the same notification regarding an update to use my iPhone 12 after I updated my system to 13.6.1. It took a total of 15 seconds to complete.
Thanks - but my old Mac is on 10.14.6 and that version seems not to work with the iOS 17.0.3 iPhone. I did try your suggestions but it still will not see the 15.
I am thinking if I upgraded to the 13.6.1 it might work. BTW - I had no problems whatsoever with my iPhone 12 OR my iPhone 14 on this old Mac. Only the 15. And the 15 works just fine on the new Mac running Sonoma. Thanks though!!
