Can't Assign an Application to a Specific Desktop Using Multiple Monitors and Ventura (Latest Version)

It used to be I could Option-Click (Right Click) on an application in the dock and assign the application to a specific space on a specific desktop. I would simply select the space I wanted using Mission Control, and would have the option to "Assign to This Space". Since I upgraded to Ventura, however, this option has vanished. Now I can either assign the application to open on Desktop 1 or Desktop 2 - but not to a specific space on either desktop. I have multiple spaces on each desktop - so that is not the issue - although Apple Support always flags that issue in its replies. But it does not apply to my situation. All I want to be able to do is to assign an application - like Apple Mail - to Space 3 on Desktop 1. That's it. That functionality - if it exists - is not obvious to me - nor well addressed by Apple Support. Any help would be appreciated.

Maybe the wording is not very clear, but you can certainly assign an application to a certain Space.

Options->Assign To: Desktop on Display 1

will assign it to the current Space on that display.

So move to Space 3, and select that option, and there you are.
