Apple Pencil starts creating text boxes while taking notes

I just bought my Apple Pencil and started using notes or scribble (they seem to be the same app) to take notes. For some reason the app keeps creating text boxes while I’m just trying to take notes for creation to text - what’s up?

Apple Pencil use in Notes I use Notes to make typed “to do” lists and would like to use my Apple Pencil to cross out completed tasks.
