Can't figure out how to enter passcode
I created a passcode for my iPhone SE 3rd generation and when I go to settings, my name, it's grayed out so I can't enter it.

Settings > Screen Time > Content & Privacy Restrictions > Passcode Changes and you'll be prompted to enter your Screen Time Passcode there

While lobsterghost1 very likely answered your question, I find your question somewhat ambiguous … so in case you meant something else:
If your Apple ID is greyed out in Settings - Apple Support
Go to Settings > Touch ID & Passcode instead of where you suggested.
Thank you for replying. What I created, on the advice of a NYT tech story, was a screen time passcode to prevent Apple ID password changes. But now I can't remember where to enter that 4-digit screen time passcode that I created. Can you please help?
