It’s definitely possible to make an alias on iCloud Mail. Apple has this support article that has the instructions: Add and manage email aliases for iCloud Mail on iCloud.com – Apple Support (UK)

They also have another article that confirms you cannot rename your primary alias/iCloud Mail address once created: https://support.apple.com/en-gb/guide/icloud/mmdd8d1c5c/1.0/ic

If you want one of your alias’ to be the default From address, you can specify that on settings for iOS/iPadOS and on iCloud.com settings.
