I have recently bought the Apple Vision Pro and I am frankly amazed with the capabilities. However, since I live in Greece, I can not get hold of any application, since the App Store for Apple Vision Pro is not supported in Greece.
Does anyone have a clue when should we expect this in Greece?

That would be a violation of the Terms and Conditions of the App Store.

No one here in this user-to-user forum would know the answer to that. Anyone who might know the answer is working under an NDA. Speculation about Apple's future plans are not permitted here.
The Vision Pro is currently available in China mainland, Hong Kong, Japan, and Singapore, Australia, Canada, France, Germany, and the U.K.
Just like others said, there’s no telling when the Vision Pro will be available in Greece, however if you’re having issues accessing the App Store, you should be able to set up a US based Apple ID to access the App Store and download apps. I’m not the most familiar with the process as I’m from the US but I’ve heard from other international users that this is what they have done and it works alright
Apple vision pro is only supported in USA so i greece i dont know.....
