What type of external drive would I be able to transfer a rather old selection of external drives to, and what is the process, and what format should I use to preserve what I have without erasing them please?
Mac mini, 10.13
Buy a new External Drive. SSD if you can afford that.
Format the new drive formatted Mac OS X Extended, Journaled or apfs. You do this with Disk Utility.
Plug your old external into your Mac (call that A)
Plug your new drive into your Mac. (call that drive B)
Drag the contents of A to B.
That's it.
