You can use a Power Strip for other A/C devices that need to be plugged in.
The Mac mini is a desktop computer and is not really intended for portable use.
If you need portability, then a MacBook Air or MacBook Pro and a portable external drive is the way to go.
1) You really do not need a fast SSD for Time Machine.
2) Stay away from discount hard drives that go on sale weekly.
3) Desktop hard drives tend to be more reliable than portable hard drives.
4) For a Mac mini with a 2T internal drive, you will want at least a 4T external drive.

I’ve been using Seagate HDDs, and NAS.
The NAS particularly where there are multiple clients, or mobile Mac, or where the other features of the NAS can be useful.
SSD is overkill, unless you plan on performing restores frequently.
I’d look for a 5 or 6 TB HDD here, or larger.
+1 for the recommendation of OWC. I've purchased a number of drives from them over the years and have never regretted it.
The OWC mini stack is also beautiful and reduces space needs. I understand that desktops are safer, but the need for electrical power plug-in, space taken, and portability are issues to consider in my set up.
