When is the updated version of Mail being released? Was expecting it within the 18.1 update?

I believe you are referring to the new Apple Intelligence in Mail.
Apple Intelligence features will start rolling out October 28 with iOS 18.1. Though we do not know exactly when for Mail.
Keep in mind, you will need a compatible device to run Apple Intelligence.
