I have changed the first day of week in settings -> general -> language ®ion to Monday. But it doesn’t change anything in calendar app. The week still starts with Saturday in the app. What should I do?

I’m not sure where you changed that setting (your 2nd screenshot). In iOS 18, go to Settings > Apps > Calendar > Start Week On and choose another day:
When I do so, the Calendar app reflects the change.
