iCloud Query

Signed-out of iCloud a couple of days ago.
Opened 'Finder' today (while still signed-out of iCloud). The 'Favourites' & 'Locations' Menus appeared (as usual) on the left-hand side of Finder, but the iCloud Menu is no longer visible. (I assume that's normal, after signing-out of iCloud, correct?)
What really threw me though was that (while signed-out of iCloud) I clicked on 'Documents' under the 'Favourites' Menu, and it was empty. (No Files in it).
Once I signed back into iCloud, the iCloud Menu reappeared in Finder and ( listed under the 'iCloud' Menu) was 'Documents' complete with the files I had expected to see earlier when I clicked on "Documents' under the 'Favourites' Menu.
The 'Documents' Folder (under the 'Favourites' Menu) still remains empty. My previous practice has been to find files by navigating the path: Finder / Favourites / Documents, but now that is no longer possible, as the navigation has become Finder / iCloud Drive / Documents
How do I put things back the way they were, i.e., so that I can access my files in on the path:
Finder / Favourites / Documents?
(I can only guess that on some past, forgotten occasion, I must somehow have mapped 'Documents' to iCloud Drive but - even if that were so - until the recent issue described above - I've still been able to find my files via the Path: Finder / Favourites / Documents, which is no longer possible).
