Has anyone else experienced this, where a Mac mini M2 Pro randomly just shuts down, but then randomly starts up again.
Possibly when it goes to sleep.
Reinstalled system OS to the latest version (13.7.1) - unplugged for a few hours and reset via the power button held down for 20 seconds. Ensured no software or log-in items in evidence. Just, no matter what, it likes to turn off, and turn back on again.

Sleep is unnecessary on later Macs and should be disabled. Shut for long absences/idle overnights (i.e. do not manual-sleep), and for regular operation, use the settings exactly as shown below (reboot after changes) should fix.
Additionally, avoid manual sleeping your Mac and use the Lock Screen settings to switch the display off on timer:

I acquired 2 machines (same spec) at the same time, adjoined to the same model monitor with the same set-up etc. Only one Mac exhibits this madness.
Even after setting the above to be aligned, the fact that the lad shuts down anyway, is a bit odd, right?

Out of interest, doesn't look like it's even acknowledged it's been in a shut-down, start-up loop for the last day:

Sleep is an invitation to mystery behavior. It’s doing that, clearly. Disable and forget.
What do you mean for "later Macs". Would a M1 2021 iMac qualify? Should I disable "sleep" too?

Macs with mechanical hard drives, typically 2017 or earlier. Yes do it.
You’re not on the latest version which 15.1, I would start there.
