Some of the photos of the mini Mac in the Apple Store show things like the mini Mac, monitor, wireless keyboard and wireless mouse. This to me would imply that both devices could be used at the same time; and they’re both Bluetooth devices.

Yes. It can use a Bluetooth keyboard and mouse at the same time. It can also use Bluetooth headphones or speakers at the same time as the Bluetooth keyboard and mouse.
This has been standard for many years.
