I dont why but my device went backto IOS17 the last one which was on an old iphone 11,got a 14 and it was doing the same,went down to a 13 and went with pSim instead of esim just to test my hypothisis. And it stopped until i powered up the 11 to wipe and recycle it. but it was mainly because of the icloud i assume.

Downgrading of the iOS Version:
You Can't. The iOS cannot be downgraded. So, this seems to have been a glitch. Where did you purchase this iPhone giving you the issue? IF not from Apple, then I would be a bit skeptical as to if it is an official device, or simply just jailbroken.
