When I try to Rename a file in Finder the 'cell' colour changes and the text (i.e. the current name) is invisible (I assume it's the same colour. If I cannot see the text I am unable to edit it 🤦🏼♂️

Try changing the Accent and/or Highlight color in System Settings > Appearance.
