This is an older thread, but with the newer Apple TV 4K, there is a way to split the audio and video from an iPad.
On the Apple TV (ATV) to go setting and bluetooth. Connect your bluetooth speaker.
Then you can share your iPad to the ATV, the video will go to the screen and the audio will go to the setup bluetooth device.

You aren't splitting audio/video, which is not possible. What is happening here is you are setting the audio out on Apple TV to a BT speaker (this can be done with an airplay compliant speaker as well) so the stream is sent to Apple TV and then the audio is redirected to the output device that was specified. This was also possible on previous 4K models as well as the 4th gen (Apple TV HD).
Not possible, unfortunately.
