Which clearly has NO "internal microphone" option any longer.
I can't figure out why. It is driving me nuts.

soundflower started becoming difficult to install in Big Sur, and AFAIK does not work at all in Monterey and later. I long ago started using BlackHole Virtual Audio Driver for all of my recordings.
Soundflower was an third-party audio routing app that had to be installed. Loopback is another one that works with Sequoia. I don't have use for any so I can't help you set them up.
Just to add, if you haven't done so already, update to Sequoia 15.3.1.
and BTW, the difference between your above screenshots, is one is for an audio recording. the other is for screen recordings.
