Pages has no character style find/replace feature, nor any autosensing of foreign phrases and their conversion to an italicized character style. It is all on you to do this manually.

I already stated that fact. If you want to find/replace styles, you need to export to Word, and open in MS Word, or LIbreOffice Writer to perform style find/replace. Save as a Word document, and reopen it in Pages.
I think you will be hard-pressed to find any word-processing application that automatically styles foreign phrases as italic.

Thank you Viking... and thank you Apple for not including what would seem to be an easy adaptation. Serves me right for writing a novel with foreign characters, I suppose...
