It could be due to a few settings. First, the Attention Aware Features can lower the volume when it detects you're looking at the screen, so turning off this feature in Face ID & Passcode setting might help. Another possibility is the Bluetooth connection to your car, which may cause the volume to adjust when you disconnect, so manually adjust it or re-pair the connection.
