I had the same trouble after updating MacOS 15.4.1 on my MacBook Air M2 chip. None of the guidance provided in the reply of 4/5/25 fixed the problem for me. However, I was able to fix it as described below. I have an iPhone 15 pro. Rebooting both failed to fix the problem. This did fix it for me:


On iPhone

Settings | General | Airplay & Continuity


I deleted the connection to my MacBook Air.


And then I initiated a new connection from my MacBook Air using the iPhone Mirroring App on my MacBook Air. iPhone mirroring works again for me.


Hope this proves helpful to others similarly frustrated.
