I realized that my iPhone 11 will not get updates after 2025 but what problem should I expect other than battery and dealing with new apps which I understand already?

You can't know that iPhone 11 won't get updates after 2025. Apple has not published anything suggesting so. And this is a user to user only forum, so we can't know either. When an iPhone stops receiving updates, usually over time, app developers stop supporting apps when a device gets too old. But we can't possibly know when that will happen for iPhone 11. Only you can decide when you think it's time to trade in your phone in favor of a newer model.

The phone is not going to just suddenly stop working or develop strange issues simply because it’s not getting software updates anymore.
Even my iphone 6s just got a security update.
