There is no way to know. Removing the phone from your devices, was sadly the wrong thing to do for a lost phone. Doing so, allows whoever has the phone to get into it and wipe it for their own use.

OK. Nice of you. But we can't tell what data they have access to or not. Hopefully, you used a Passcode on the phone? If yes, since they won't know the passcode, they can't get access to your debit cards or data. But they can wipe the phone for their own use.

Personally, I'd notify my carrier the phone was lost and ask them to blacklist it, so they can't use the phone. They have no right to use someone else's device. But you can do as you please and if you don't mind them using the phone, you don't need to do anything.
