The Apple Watch does not have the native ability to do this. Here’s what ChatGPT has to say about the matter and third party apps that do have this capability.

💡 Apple Watch/iPhone Setup Tips

Option 1: Manual Alarm Based on Sleep Time

  1. Estimate your sleep start time.
  2. Use the Clock app to set a custom alarm at:
    • Sleep time + 1.5 hours (1 cycle)
    • Or + 3 hours (2 cycles)

Option 2: Use a Smart Alarm App (More Accurate)

Apple’s native alarm app doesn’t adjust for sleep stages. Try these Apple Watch-compatible apps:

  • Sleep Cycle (iPhone + optional Watch companion)
  • AutoSleep (detailed sleep analysis)
  • Pillow (Apple Watch native, good UI)
  • Sleep++ (free, more basic)

These apps track your sleep stages and can wake you up during light sleep, close to your desired wake window (like 6:30–7:00 AM).
