Did you use Booking.com to link to your calendar or agenda? Hotels.com does something similar. I wonder if it was an app that canceled things and not Siri.
No. Siri learning from the app does not allow Siri to cancel a reservation. Siri has no mechanism to cancel a reservation.

thanks for the feedback, the cancellation came from the hotel itself.
Siri then cancelled the agenda item/activity even before I had read the email from booking.com.
siri used the email, recognised it was a cancellation , cancelled in my agenda, at that moment it seems it was all seri but that doesn’t explain why it did anything because it is still disabled on my phone.
I panicked and was wondering if I ever was mean to Siri and was going to pay for it.
I hope we still have a few years before AI takes over.

i see that for the app booking.com on the Siri tab, it was checked to learn from it? Do I now have to uncheck individually al my apps?
How was the reservation canceled, text, email, phone call or what exactly?
