I am trying to buy an Apple Watch and I have a gift card for almost half the purchase, but I would like to use installment payments from my Apple Card to pay the remaining balance and it will not allow me to do that

My understanding is this can’t be done online, only in an Apple Retail store. You may be able to do it via a voice call to Apple Sales at 1-800-MY-APPLE.
Why not? What happens when you try?
You should be able to select the Apple Card installment option during the watch configuration, and once you get to the checkout screen, there should be a place to enter a gift card code.
Is that not the case?
No it gets all the way to check out and there is no place to use the gift card first
