I used to use macros quite a bit in Libre Office and MS Word on Windows. Can I record or write macros like those in Pages? It would be so helpful, especially for certain types of replacement formatting that can't be done automatically.

Pages is not a Word clone and has no macro support, either natively or in support of macros already in Word documents. Microsoft does offer Word on iPadOS or macOS. Macros written for Microsoft Word on Windows, or even LibreOffice Writer, may not be fully compatible with Word on iPadOS or even macOS.
Although Pages for macOS has AppleScript support, its related scripting dictionary support is frustratingly limited. Pages itself does not offer extended Find/Replace features (e.g. styles, regex, etc) found on LibreOffice or Word. You might be better served remaining with Microsoft Word on iPadOS, or your choice of Word or LibreOffice on the Mac.
