I was using Numbers and accidentally deleted some columns. I immediately clicked the Undo the columns delete and the columns re-appeared but the data in 75% of all rows has disappeared. I tried to revert to a version of the file from yesterday and even that data is gone! Why and how can I fix this?

If File > Revert to > Browse All Versions doesn't work then it's time to go to Time Machine or whatever other backup system you are using.

It isa strange that Undo didn't undo all the way. Did you try hitting Undo again, or multiple times, to see if there was more to undo?
If you have system settings set so it asks if you want to save open documents when closing, you might be able to "revert to saved".
